From Law to Pastry: How a Couple Turned Their Passion into a Thriving Business!

In 2018, Adrien and Cecile decided to leave their established careers to bring a taste of France to Australia, and thus, Sacrebleu! was born. Leaving behind a career as a lawyer, Adrien dived headfirst into the world of baking, driven by his passion for French patisserie. Together, they started selling canelés—crispy on the outside, tender and custardy on the inside-at local markets. Today, Sacrebleu! has grown into a beloved bakery in Sydney, known for its commitment to quality and authenticity.

Dare to Follow Your Passion, No Matter the Risk

Adrien’s journey from a corporate lawyer to a pastry chef is a testament to the power of passion. His story reminds us that it’s never too late to make a bold career shift and pursue what truly excites you.

Niche Down and Excel in Your Craft

Instead of trying to be everything to everyone, Adrien and Cecile chose to specialize in a single product: canelés. This focus allowed them to perfect every detail, from the caramelized crust to the soft, custardy interior. By excelling in a niche market, they built a brand that stands out and resonates deeply with their customers.

Innovate While Honoring Tradition

While the classic canelé recipe includes rum and vanilla, Sacrebleu! experiments with new flavors like orange Grand Marnier, Nutella, raspberry coulis, and salted caramel. Adrien and Cecile's creativity keeps their offerings fresh and exciting, while their dedication to traditional techniques preserves the authenticity of this beloved French treat.

Every morning, Adrien starts his day at 4:30 AM, baking these delicious treats, and turning his love for pastry into a successful business. If you're dreaming of starting something of your own, take a leaf from their book: be bold, be focused, and always keep innovating.
